Here is the recipe to our favorite:
Chocolate Zucchini Muffins
3 eggs
2 cups white sugar
1 cup vegetable oil
1/3 cup unsweetened cocoa powder
2 cups grated zucchini
3 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
Preheat over to 350 degrees. Line muffin tin with paper liners. In a large bowl beat the eggs. Beat in sugar and oil. Add cocoa, vanilla, zucchini and stir well. Stir in the flour and rest of dry ingredients. Pour into muffin tins and bake for 20-25 minutes.
SIDE NOTE: I add chocolate chips to the batter - however much you want!
Your kids will never know there is zucchini in them (at least mine don't!)
